Our Smoked Chicken Salad is anything but ordinary. This is NOT your grandmother's mayonnaise-laden chicken salad made of diced and often dry boiled chicken. Quite contrary we begin with plump free-range hormone-free whole roasted chickens. We season our chickens to perfection and roast them till golden brown. We then use hickory wood to smoke the chickens for several hours to achieve a dense flavor adding another layer of flavor to the already rich and zesty seasoning. We then pull ALL the meat from the bones and chop the dark and white meat and mix well. That mixture is joined by fresh herbs & spices, chopped green onion, cranberries, a small amount of olive oil based mayonnaise to form the perfect balance of savory flavor with a hint of sweetness from the occasional cranberry.
